1 carrot, chopped

2 cloves garlic, minced

3/4 lb. extra-lean ground round beef

1 c. dry red wine or nonalcoholic red wine

1 1/2 tbsp. unbleached or all-purpose flour

1 1/2 c. fat-free milk

1 can (28 ounces) crushed tomatoes

1 can (8 ounces) tomato sauce

2 tbsp. chopped parsley

1 tsp. dried basil or oregano

12 oz. spaghetti

  1. Warm the oil in a large nonstick skillet set over medium-high heat. Add the onion, celery, carrot, and garlic. Cook, stirring often, for 7 to 10 minutes, or until tender. Add the beef. Cook for 3 minutes, or until no longer pink. Add the wine. Cook for 2 minutes, or until the wine is almost evaporated.
  2. Place the flour in a small bowl. Gradually add the milk, whisking constantly, until blended. Add to the skillet.
